Spring salad with prawns
Spring salad with prawns, melon, Parmesan cheese and Malax Loaf cubes; serves 10
INGREDIENTS:
10 slices of Malax Loaf, diced
200 g mixed sprout salad
¼ watermelon, diced and seeded
½ cantaloupe melon, diced
100 g Parmesan cheese
500 g fresh prawns, peeled and drained
1 garlic clove
freshly-ground pepper
100 g good-quality mayonnaise
Avocado oil
Mix the mayonnaise and the crushed and chopped garlic clove.
Using a mandolin slicer, shave the Parmesan cheese into paper-thin shavings.
Arrange the ingredients into a layered salad.
Garnish with e.g. edible flowers or salad cress.
Leave to marinate for approx. 10–15 minutes before serving.
