Spring salad with prawns

Spring salad with prawns, melon, Parmesan cheese and Malax Loaf cubes; serves 10

INGREDIENTS:

  • 10 slices of Malax Loaf, diced
  • 200 g mixed sprout salad
  • ¼ watermelon, diced and seeded
  • ½ cantaloupe melon, diced
  • 100 g Parmesan cheese
  • 500 g fresh prawns, peeled and drained
  • 1 garlic clove
  • freshly-ground pepper
  • 100 g good-quality mayonnaise
  • Avocado oil

  1. Mix the mayonnaise and the crushed and chopped garlic clove.
  2. Using a mandolin slicer, shave the Parmesan cheese into paper-thin shavings.
  3. Arrange the ingredients into a layered salad.
  4. Garnish with e.g. edible flowers or salad cress.
  5. Leave to marinate for approx. 10–15 minutes before serving.
