Herring sandwiches


For 4 people

  • 4 slices of Malax Loaf
  • 4 salad potatoes (e.g. Siikli or Maris Peer)
  • 4 eggs
  • Slices of soused herring
  • 100 g lemon mayonnaise
  • 1 red onion
  • 100 g roe

Dill and lettuce sprouts
Peel and boil the potatoes and leave to cool.
Boil the eggs for approx. 9 minutes.
Slice the potatoes and eggs.
Peel the red onion, cut it into paper-thin slices and place the slices in ice cold water.
Arrange the mayonnaise, sliced potatoes, herring, sliced eggs, sliced onion and roe on top of the Malax Loaf slices.
Garnish with pepper and lettuce sprouts.
