Root vegetable salad

serves 8


  • 6 slices of Malax Loaf
  • 4 boiled carrots
  • 4 pickled beetroots
  • 2 gherkins
  • 1 apple
  • 1 onion
  • 8 matjes herring fillets
  • pinch of freshly-ground pepper

Salad dressing:

  • 150 g soft goat cheese
  • 1 tbsp liquid from the pickled beetroot to give colour to the dressing
  • freshly-ground pepper


Peel the root vegetables and apples. Core the apples.
Cut all the ingredients into small, even-sized pieces. Cook the carrot pieces and cool them quickly. 
Arrange the ingredients in layers in a mould and remove the mould carefully.
Add the pieces of herring.

Salad dressing:

Mix the goat cheese and the liquid from the pickled beetroot.
Make sure that the dressing is thin enough to be poured.
Season the dressing.
